Upkari is a dry side dish which is known as stir fry.We konkanis prepare upkari’s with pulses,vegetables or with various beans.Few upkaris don’t have onion in the recipe.

Ingredients :-
- Dried or fresh Lima beans/Double beans – 1 cup
- Onion – 1 medium
- Green chilly -2 or 3
- Curry leaves – 1 sprig
- Mustard seeds – 1 tsp
- Hing – 1 tsp
- Coconut grated – 1 tbsp
- Salt to taste
- Oil for tempering
Method:-
- Soak the beans in water overnight for 6-8 hours.
- Pressure cook the soaked beans with enough water for 3-4 whistles or until they are soft.
- In a pan heat oil and splutter mustard seeds,add hing curry leaves and green chillies slits.
- Now add the chopped onions and saute till they turn pinkish.
- Put the cooked beans and salt to taste.Saute for a minute.
- Garnish with coconut and close lid. Simmer on gas for 2 minutes.
- Upkari is ready to serve.

Note:-
- Do not forget to soak the bean as it will take more time to cook if not soaked.
- Do not over cook the beans as it turn mushy.
- The texture should be soft and firm.so first cook for 3 whistles , later check it and cook further if necessary.
- If using green Lima beans (fresh ones) avoid the soaking procedure . Avarekalu/jeev avro also gives the same taste.
- If you don’t like the skin of the fresh avro or lima beans- you can soak them in water for 2 hours and remove the skin.
