Double beans/Lima beans upkari

           Upkari is a dry side dish which is known as stir fry.We konkanis prepare upkari’s with pulses,vegetables or with various beans.Few upkaris don’t have onion in the recipe.
          Here is a simple upkari but its so  really tasty. It almost tastes like bibbe upkari (tender cashew).This upkari can be done with fresh lima beans or Jeev Avro/Avrekalu which is available during winter season.Lets check the recipe.You can find recipes with avro Here in this blog

Ingredients :-

  1. Dried or fresh Lima beans/Double beans – 1 cup 
  2. Onion – 1  medium
  3. Green chilly -2 or 3
  4. Curry leaves – 1 sprig
  5. Mustard seeds – 1 tsp
  6. Hing – 1 tsp
  7. Coconut grated – 1 tbsp
  8. Salt to taste
  9. Oil for tempering

Method:-

  • Soak the beans in water overnight for 6-8 hours.
  • Pressure cook the soaked beans with enough water for 3-4 whistles or until they are soft.
  • In a pan heat oil and splutter mustard seeds,add hing curry leaves and green chillies slits.
  • Now add the chopped onions and saute till they turn pinkish.
  • Put the cooked beans and salt to taste.Saute for a minute.
  • Garnish with coconut and close lid. Simmer on gas  for 2 minutes.
  • Upkari is ready to serve.

Here is a picture of similar upkari made with Jeev Avro.I have removed the skin of the avro for this upkari.

Note:-

  1. Do not forget to soak the bean as it will take more time to cook if not soaked.
  2. Do not over cook the beans as it turn mushy.
  3. The texture should be soft and firm.so first cook for 3 whistles ,  later check it and cook further if necessary.
  4. If using green Lima beans (fresh ones) avoid the soaking procedure . Avarekalu/jeev avro also gives the same taste.
  5. If you don’t like the skin of the fresh avro or lima beans- you can soak them in water for 2 hours and remove the skin.
