Ambey Daali Saaru

              This delicious recipe is from our culinary expert Asha Satish Phillar Akka’s  cook book The Konkani Saraswat Cuisine Book.
Its a saaru that is prepared when mangoes are plentiful in the market. A refresher during the hot summer months.
Ingredients:-

  • Thuvar Dal – 1/3 cup
  • Green Mango skinned and coarsely grated –  2 tbsp
  • Green chillies slit lengthwise – 2 nos

For the Paste :-

  • Jaggery/Gud – small piece
  • Grated coconut – 1 tbsp
  • Garlic with skin, crushed and fried in oil/ghee – 2 nos

Grind all the  ingredients 1-3 to a coarse paste.
For the seasoning:

  • Oil- 1 tsp
  • Mustard Seeds- 1/2tsp
  • Curry leaves/ Karibevu – 1 sprig

Method:-

  1. Pressure cook the dal until soft, with grated mango
  2. When done, beat the dal lightly. Add salt and a little water if the dal is thick.
  3. Add the ground paste and bring to a gentle boil and then leave simmering for a few minutes.
  4. Season with mustard seeds and curry/ karibevu leaves.
  5. Yummy saar is ready to serve.
Notes:-
                     The saar should have a consistency of thick soup.
