Godda Appo

                    Godda appos need a special pan called appyan kayli or Aebleskiver pan  .Appos are easy to  make  if you have a good one – a non-stick one or of  heavy  good quality  metal  ( mine is made of Hindalium  & I got good ones right from day 1 of using it )
Basically Appos are goddache  (Sweet ) or Mitsanniche ( savoury ) . the savoury ones can be had for breakfast & is made from the normal dosa / idli batter . you can make variations by adding some veggies or spice it up with chillies 
Here is the recipe for Godda Appos ;
Ingredients ;

  • Raw rice – 3 cups  ( soak for about 4-5 hours ) 
  • Grated  Coconut  – 1/2 of a large one or a full small one ( preferably  don’t use the dry ones – use the torno or jeevo narlu)
  • Jaggery – Grated – 1 & 1/2 cups  or as per taste 
  • Bananas – small yellow ones – 4
  •  Coconut – chopped into small bits – 2 tbsps – optional 
  •  cardamom- 3 
  •  Ghee – for frying 

Method:-

  1. Heat the jaggery in about 3/4 cups of water till it melts completely . then strain . If you get good quality jaggery , you may avoid this step & use it straight away to grind .                                              
  2. Grind the soaked rice , using this strained Jaggery water to a not so fine paste .                       
  3. Grind the coconut & bananas to a fine paste using  the jaggery water .the consistency of the batter should be thinner than idli batter but thicker than dosa batter .
  4. Cut the coconut into tiny pieces as shown in the pic below. 
  5. Deep fry them to a golden brown & add to the batter . This is optional and you can avoid if you want . But I would recommend this because biting into these bits really enhances the taste . 
  6. Powder the cardamom & add to the batter .Mix well.
  7. Now heat the appyan kayili on high heat . add ghee in the depressions .                     
  8. And pour the batter sizzling into the kayili.
  9.   Reduce flame to sim & cover .
  10. Keep checking to see if its done .this should take about 3-4 minutes When done they will look like this .
  11. Now with a spoon or knife – nudge out the appos & turn them to cook on the upper side . to reduce time ..you can flip them to the sides like in the pic below .then pour ghee & pour another batch of appo batter to cook . Remember to increase flame while pouring batter and then immediately reduce flame thereafter . because otherwise the insides will remain uncooked .
  12. Proceed as before . cover & let cook . remove the flipped appos after they have browned their under sides . flip the now cooked appos from the depressions / kuzhis to the side .Add ghee & pour a fresh batch of batter.Proceed in this way with the rest of the batter
Enjoy tasty appos with a crisp crust and a soft inside – hot or cold .!!
Note
Always remember to pour batter in a sizzling kayili  & then reduce flame .
