Rava Kesari

This is a recipe of my dear friend – Asha Sunil! a very good cook who has participated in many cookery competitions & won too ! 
A very simple quick sweet .. you will all like to try out!

  • Rava / Sooji/ Semolina 1 cup
  • Sugar 2 cups* 
  • Raisin 1/4 cup
  • Cashew nuts 1/8 cup 
  • Ghee 1/2 cup 
  • Kessari powder/yellow colour (Optional) 2 drops 
  • Water 2 & 1/2 cups 

*Sugar can be as less as 1 & 1/2 cups


  1. Heat a pan with ghee and oil and add the cashew nuts. 
  2. Just give it a stir. No need to make it gold. 
  3. Add the raisins and stir in medium flame until it gets puffed up fully. 
  4. Add the rava and roast until the raw smell goes off. No need to wait until the rava turns colour. 
  5. Boil water side by side and add it to the roasted rava. 
  6. Carefully mix as it may overflow or spill as it boils. 
  7. Mix well until it gets thick in consistency. 
  8. Add sugar and colour. 
  9. Continue stirring till the kesari starts leaving the sides and comes together 
  10. Transfer to the serving bowl.
