Cauliflower Ambat

                 Cauliflower ambat is a traditional konkani recipe.It is a delicious main/side dish prepared with green peas,potato and drumstick in it.
The spicy coconut based masala is flavoured with the caramalized onion.It is best  served with hot steaming rice.

Ingredients :-

  • Cauliflower florets – 12-15
  • Green Peas – 1 cup ( if using the dried ones,soak it previous night and cook them separately.)
  • Drumstick – 2 nos
  • Potato – 1
  • Toor dal – 1 tbsp cooked
  • Onion – 1/2 finely chopped
  • Salt to taste

For Masala:-

  • Coconut grated – 1 cup
  • Red chillies – roasted 6-8 nos
  • Tamarind marble size

Tempering

  • Onion 1/2  finely chopped
  • Oil – 2 tsp

Method:-

  1. Chop Cauliflower into florets,add salt and soak them in warm water for 5 minutes.Then after 5 minutes separate the florets and keep aside.
  2. Cook green peas in cooker for 1-2 whistle.they should not be over cooked and need to be firm .
  3. In a pan add the Cauliflower florets,potato,onion and the drumstick along with water and cook till soft.Add the cooked green peas
  4. Grind the ingredients coconut,red chillies and tamarind to a semi fine paste and add this to the cooked vegetables.also add the cooked toordal and bring to a  boil.
  5. Meanwhile in a pan add oil and fry the chopped onions till they turn brown/caramalized.Pour this seasoning over the vegetable masala.
  6. Cauliflower Ambat is ready to serve.
