Karathe Talasani – version- 2

              This is side dish prepared with Bittergourd.A simple stir fry with very few ingredients in it.
As I mentioned very few ingredients you might feel whether it would taste bitter .You need not worry about it at all,as we apply salt to remove the extra bitterness in the veggie. The taste is unique when the flavor of other ingredients is fused which balances the bitterness of the gourd.
Non garlic lovers may not worry about trying this.There is another version for you which was updated by my friend Priya in this blog.
If you really want to keep away from bitter gourd or want to try with any other vegetable then you can try out with veggies like Phagil Talasani,Ganti Talasani recipe updated by me and Beans Talasani by Sandhya Puranik.

Ingredients

  • Bitter gourd – 2 nos-
  • Red chillies – 3-4 nos
  • Garlic pods – 8-10 nos crushed
  • Bimbul- 2-3 nos/ OR /Tamarind juice – a marble size soaked in little water.
  • Oil – 2 tsp
  • Salt to taste

Method

Wash bittergourd cut them and remove the seeds in it.Then chop them into thin pieces as in the picture below.
Apply salt to the chopped gourd and leave for 15-20 minutes.
Take a pan and heat oil and fry the garlic pods when they turn brownish add the red chillies broken into two and fry for a minute.
Add bitter gourd squeezed very well with hand,chopped bimbul and salt (only if needed).Sprinkle very little water.Close lid and cook till the veggie is soft.
Once or twice open lid and give a stir.When the gourd is cooked completely open the lid and keep in sim for 2-3 mnts till the curry is dry and switch off.
Serve as a side dish with rice.
