This is a very traditional recipe but hardly known nowadays . I learnt this from my sister-in-law .Quite an easy and tasty one . Please do try out !
Ingredients :-
- 2 cups – rice flour (fine)
- 4 cups of boiling water
- 1 cup – all purpose flour, (maida),
- Salt to taste.
- Oil – 1/2 cup ( refined or coconut)
Method :-
Put the rice flour in a big wide bowl. Make a well in the centre . Add salt and pour boiling water little by little using a wooden ladle. Bind it adding water as needed. Don’t add the water all at once . You may need less or more water as per the quality of the rice flour. Once it binds, using greased hands, knead the dough till soft . Sprinkle water if needed. Make balls and Keep it covered with a clean damp cloth.
Make a dough of maida and water. Add lots of oil, knead it well just like you make it for puranpoli (ubbati) covering dough. Make smaller balls .
Roll the maida ball , keep the rice dough ball on it . Cover it, dip the the dry flour(maida), roll it as thin as you like.
Fry on both sides on a medium flame. No need to add oil or ghee.
You can have these with any chutney, any curry. or with mango harshale.
