Breadfruit or gudugo / jeevkadgi in konkani is very much liked by us GSB’s and we make a variety of dishes with it . You an get the recipes for all these dishes in this very blog ! But we being GSB’s and our nature being not to waste any thing that can be converted into a delicious dish – use the skin too to make a very tasty upkari ! yes – gudugya / jeevkadgi saali upkari ! Let’s see the recipe – a very simple one yet so tasty – you will never again waste the skin !
Ingredients :-
- Skin of breadfruit – 1 cup(chopped )
- Potato – 1 small
- Red chillies – 1-2 to taste
- Salt to taste
- Oil & mustard seeds for tempering
Method :-
- Remove the skin part a little thickly with some flesh too.
- Scrape the green part ,lightly to remove the dark spots .
- Wash well & chop . Chop the potatoes too .
- Heat kadai & do seasoning with mustard seeds & red chillies .
- Add the chopped veggies , salt & just a little water .
- Cook till done .
Serve with rice or pejj as a side dish!
You can also use sliced Jack fruit seeds instead of potatoes !
Notes :-
- The potato is to buffer up the volume of the upkari . You can avoid if you have lots of skin . but adding a small one is recommended to add taste .
- You may add green chilies instead of red or add add chilli powder too as per your preference .
- You can also add a little hing in the seasoning because of breadfruit’s nature of creating gastric troubles in some people .
