Pathrade upkari

                  Pathrado is the most popular dish of the konkani community prepared with arbi/colocassia leaves.It is loved by all and is a must on festivals like Gowri Pooja and Ganesh Chathurthi. We already have the recipe of pathravodo/pathrado and few other varieties in this blog under the heading side dish and snack.
           Today, what I have for you is pathrade upkari which is a transition of pathrado. When we have some leftover pathrado at home very next day we prepare this pathrade upkari. To increase the volume of the upkari we add onions and coconut.Here is the recipe…..

Ingredients:-

  1. Steamed pathrado pieces- 2 to3 nos (shredded)
  2. Onion – 1  chopped
  3. Coconut – 1 tbsp grated
  4. Mustard – 1 tsp
  5. Red chillies – 2 nos
  6. Methi seeds – 3 to 5 nos
  7. Curry Leaves – few
  8. Oil – 1 tsp
  9. Salt if necessary

Method:-

Shred/chop pathrado into pieces

 Keep mustard,methi,curry leaves,red chillies,chopped onions and grated coconut ready

Heat a pan with oil,splutter mustard,add methi,red chillies and curry leaves.
Add onions and saute until they are soft
Add the chopped pathrado and saute well ,cover  and cook for 2 minutes
Add the grated coconut and mix well until the coconut and pathrade combine together,cook for 2 more minutes.Switch off gas.
Serve as a side dish with rice as seen in the picture below.
