There are many sagle recipes in this blog , Here is yet another one with roasted coconut – Matti Gulla (brinjal) mashinga sangh galnu soyi bajjunu sagle! Recipe & pic are courtesy again my dear friend – Veena Nayak – So let’s check the recipe !
Ingredients :-
- Matti Gulla(a Brinjal variety – medium sized 1
- Drumsticks – 2
- Onion – 1 big
- Ginger. – a small piece
Ingredients for masolu /masala :-
- Grated coconut – 1/2 of a coconut
- Red chillies – 5 to 6
- Tamarind – a little
- Coriander seeds – 1 tbsp
- Urad dal – 1 tsp
For Tempering :-
- Mustard seeds – 1 tsp
- Methi seeds – 1/2 tsp
- Curry leaves – 1 sprig
- Coconut oil ( preferably ) – 1 tbsp
Method :-
Cut all the veggies and cook adding little water .Keep aside.
Heat a little oil in a kadai ,first add urad dal, then coriander seeds,red chillies, grated coconut and tamarind – roast well till browned.
Let it cool.
Grind well in a mixer ,adding a little water to a fine paste.
Add the masala/masolu to the cooked gulla,you can add a little water in the mixer jar and add it too to the gravy , add salt,mix well and boil well.
Do not add too much water as this is a semi dry curry. Switch off the gas when it comes to a boil.
Heat a little oil in a small kadai,splutter the mustard seeds ,add the methi and curry leaves,m Pour on the curry. Lastly garnish with some coriander leaves.
