Duddhi Elchikeri

Elchikeris are usually served as side dishes with a subtle flavour and taste. These are usually non-spicy and is a must during festive occasions and temple sambradhans, This Konkani food is very much relished by all.

 

Ingredients:-
  • Tur dal – 3/4 cups
  • Pumpkin – 250 gm
  • Coconut grated – 1/2 cup
  • Red chillies – 2/3
  • Turmeric powder -1/4 tsp
  • Salt to taste
For tempering:-
  • Mustard – 1 spoon
  • Jeera – 1 spoon
  • Coconut grated – 2 tbsps
  • Curry leaves – 1 sprig

Method-

  1. Pressure cook tur dal and pumpkin pieces (without removing the skin). If you wish to remove the skin, cook it separately!
  2. Make a smooth paste of coconut ,turmeric and red chillies (this dish should NOT be spicy).
  3. Add this paste the dal and duddhi. Add salt and bring to a boil.
  4. Heat the oil in a Kadai ,splutter the mustard seeds ,add the jeera, curry leaves, and the grated coconut.
  5. Roast it to a golden brown and then add to the curry,Enjoy this delicious curry with rice.
  6. Choose very ripe and yellow pumpkins for this dish as the sweetness of the pumpkin gives the dish its uniqueness!
