Dudhya Ghire Chutney/Pumpkin Fibre Chutney
This recipe is almost forgotten now or we simply throw away the fibre without knowing how nutritious it is.In this recipe the fibre around the seeds are used to prepare a lip smacking chutney which is used as side dish with our meals. So ,the next time you buy a pumpkin don’t waste the fibre and try this chutney which is not only tasty but healthy too.

Ingredients:-
- Fibrous part of pumpkin around the seeds
- 1/2 cup coconut
- 5-6 red chillies
- Lemon sized tamarind
- Tbsp of urad dal( black gram dal)
- 1/2 tsp cumin seeds(zeera)
- Pinch asafoetida (hing)
- Jaggery as required
- Oil for tempering
- Sprig of curry leaves
- 1/2 tsp mustard seeds
- Salt to taste
Method:
- Separate the seeds from the fibre and wash it thoroughly.
- Heat few drops of oil in a pan and roast the fibre for 2-3 minutes.
- Add water and cook it till it is almost done and allow to cool.
- Meanwhile .. roast red chillies ,urad dal and jeera one by one .
- Once everything cools, grind the fibre adding coconut ,red chilies, urad dal ,jeera ,hing, tamarind, jaggery and salt with little water to not so fine paste.
- Season with mustard and curry leaves using coconut oil preferably.
- Serve as a side dish with lunch /dinner.
- Only a small amount of fibre is required as we add coconut too.
- This chutney is a mix of flavours like sweet, tangy and spicy so dont skip any ingredients.
- You can adjust the sweetness and spiciness as per your preference and use the ingredients accordingly.
