Ponsa Kakkambi

               As the name suggests this  dessert is made from ripe Jack fruit . Its made for marriages feasts especially when jack fruit is in season .Some temples too serve this as payasu  during festivals .It is very easy to make . So do try this out .
Ingredients:
  1. Raw rice – 1/2 cup 
  2.  Ripe Jack fruit bulbs – about 20  ( deseeded)
  3. Jagerry  – 1 cup 
  4.  Coconut – 1 large – for extracting – Ist  extract  milk  and  the second & third extracts
  5. Cashew nuts – 10 or more as you wish 
  6.  Elaichi / Cardamom –  2 or 3

Ponsa kakkambi

Method:

  1. Cook the rice using the third extract & then the second extract until soft.
  2. Add the jaggery and the cashew nuts and let it mix well with the rice.
  3. Add the jackfruit bulbs & cook for a minute.
  4. Now add the 1st milk. Switch off the flame when you see the first bubbles of cooking.
  5. Add the powdered elaichi & mix well.

Serve hot or cold as you wish ! Enjoy  this dish with your family & friends !
