                       Kuvvalo (Ash gourd in coconut gravy)
 Though this looks like kuvlya ambat/ thakka ambat, its totally different recipe.. The difference being we don’t add curd or tamarind pulp to this unlike ambat. Lets see how to make it..
What you need: –   

  1. Kuvvale (Ash Gourd) – 1/4 kg
  2. Scrapped coconut – 1 cup
  3. Green chillies – 6-7, you can add or reduce the nos depending on your spice meter
  4. Jeera – 1 tsp
  5. Mustard – 1 tsp
  6. Curry leaves – few
  7. Coconut oil – 2 tsp
  8. Salt – as required

How to make:-

  •  Wash & peel skin of ash gourd & cut into slightly big cubes..
  • Cook this with green chillies & salt in a vessel.
  • Grind coconut to fine paste.
  • Once the ash gourd pieces are cooked, add the ground coconut paste to it & mix well. Let it boil. Remove from flame.

For tempering:-

  •  Heat 1 tsp coconut oil in a kadai, splutter mustard, jeera & curry leaves.
  •  Pour this tempering on the prepared curry. 
  • Pour the remaining 1 tsp coconut oil also for aroma.. Mix well. Serve with rice.
