Kuvvalo (Ash gourd in coconut gravy)
Though this looks like kuvlya ambat/ thakka ambat, its totally different recipe.. The difference being we don’t add curd or tamarind pulp to this unlike ambat. Lets see how to make it..

What you need: –
- Kuvvale (Ash Gourd) – 1/4 kg
- Scrapped coconut – 1 cup
- Green chillies – 6-7, you can add or reduce the nos depending on your spice meter
- Jeera – 1 tsp
- Mustard – 1 tsp
- Curry leaves – few
- Coconut oil – 2 tsp
- Salt – as required
How to make:-
- Wash & peel skin of ash gourd & cut into slightly big cubes..
- Cook this with green chillies & salt in a vessel.
- Grind coconut to fine paste.
- Once the ash gourd pieces are cooked, add the ground coconut paste to it & mix well. Let it boil. Remove from flame.
For tempering:-
- Heat 1 tsp coconut oil in a kadai, splutter mustard, jeera & curry leaves.
- Pour this tempering on the prepared curry.
- Pour the remaining 1 tsp coconut oil also for aroma.. Mix well. Serve with rice.
