Udida Vodi…Udid means urad dal and voda/vodi means sun dried fritters . Ambat is a coconut based gravy dish had along with rice . During summer holidays elders in the house keep themselves busy preparing a variety of vodis, happalas and shevain.They sun dry them and store in airtight tins to use it during rainy season.
Ambat is normally prepared with tur dal and some combination vegetables.But vodi ambat is prepared without dal and instead these sundried fritters are deep fried and garnished on the coconut gravy.Whenever this curry is prepared my house is filled with the aroma of caramalized onions which is used as a seasoning to the curry.

Ingredients for Udida Vodo(i):-
- Urad dal / blackgram dal- 2 cups
- Green Chillies- 10 -15 nos (remove stalk)
- Cumin / jeera seeds- 3 tsp
- Salt to taste
- Plastic Sheets to spread and dry it in sun.

Method:-

Method:-
- Wash and soak Urad dal for 2-3 hrs . Drain water and grind in Mixer/blender with salt.(do not use grinder to grind urad for this recipe) .
- Remove stalk of green chillies and grind to a coarse paste.
- Transfer the ground urad paste to a bowl,add jeera and coarsely ground green chilly paste.
- Mix very well till all have blended well together.
- Spread plastic sheets.Keep heavy object like stone on four sides of the sheet in order to avoid folding of sheets due to wind.
- Spread small quantities of the batter on the sheet either with spoon or with hands.
- Let it dry under very hot sun for five days.Once its dry it can be removed with hands from the sheets.Store these in airtight dabbas/tins.Deep fry these vodis and garnish on the ambat gravy or with rice as a side dish like we eat happalas
Ingredients for Ambat recipe:-
- Grated Coconut – 1 cup
- Roasted red chillies – 6-8 nos
- Tamarind – small piece
- Onion – 1 big
- Udida vodos – 8-10 nos
- Salt to taste.
- Oil for frying
Method:-
- Grind coconut,red chillies and tamarind and salt together in a blender to a smooth paste.
- Remove this masala in a vessel and add enough water to dilute to a liquid gravy consistency.
- Finely chop half of the onion and add to this masala . Mix well and cook the gravy . Once it starts to boil switch off the gas.
- In a small pan heat oil, add rest of the onions (finely chopped ) and fry them till they caramelize (brown colour).Pour this onions over the boiled curry.
- Deep fry the sun dried Udida vodis and add them to the curry along with the caramelized onions.Mix well .
- Voda Ambat is ready to serve with dosa.
