Kuve Pitti duddali

Kuve pitti is Arrowroot Powder. It is easily available in ayurvedic stores. Kuve pitti duddali is a nutritious sweet dish. It is a easily digestive food. It has a very cooling effect on the body. Hence it is very ideal to eat frequently during summer to avoid heat related health disorder.
It is low in calories. Arrowroot porridge would help diarrhea and stomach upset. It can cure urinary infection in adults n infants. It is very easy to prepare.

Ingredients :-

  • 1 small cup arrowroot powder
  • 1 cup milk
  • 1 cup sugar
  • 1-2 tsp cardamom powder
  • 2 tsp ghee

Method:-

  1. Mix arrowroot powder with 8-10 cups of water. Strain through a strainer and collect in another vessel.
  2. Set this aside for 15 minutes.
  3. Now you can see the powder settled down and the water on top. Remove this water and retain the settled powder. To this powder add milk and sugar with 3 cups of water.
  4. Switch on gas and cook this mixture constantly.
  5. Cook till the paste becomes transparent. You can check whether it is ready by dropping the paste little on a plantain leaf and make sure it does not  to stick to fingers when touched. Then add cardamom powder and coarsely ground cashew nut (optional)
  6. Pour this cooked mixture in a plate greased with ghee evenly with a spatula.                              
  7. When cool cut into pieces of desired shape n size. Duddali is ready to eat.
Note: –  Instead of milk and sugar they can be replaced with coconut milk and jaggery.
