Anta Undos/dry fruit laddoos with edible gum

                    Anta undos is one of my favourite among laddoos. It is not only delicious but healthy too with lots of nuts and special ingredient edible gum which has medicinal properties. It is usually prepared in winters and given to children along with a glass of milk as nuts are said to provide warmth to body.So this time for Diwali I decided to prepare this sweet as Diwali usually falls during onset of winters. It was a healthy indulgence for us this time. This laddoo is also given to women post delivery (Balanthi in Konkani) as the edible gum is said to strengthen the pelvic area and also the nuts provide strength to the body.
The recipe is easy though a bit time consuming but worth the effort. I have clicked the important steps so that you can get a clear idea. So lets start with the recipe…

Ingredients:-

  • 1/4 cup each of nuts like almonds, cashewnuts, raisins, dates, dry dates/kharuk , Anjeer  (measure after chopping)
  • 1/4 cup of edible gum/dink
  • 1/4 cup or bit less of grated copra/desiccated coconut
  • 1/4 cup of ghee(decrease if you prefer)
  • 3/4 cup to 1 cup of jaggery powdered
  • 1/8th cup of poppy seeds (or can use 4-5 tbsp.)
  • 1tsp cardamom powder
  • Pinch of nutmeg/jaiphal powder(just a grate once)
  • 3/4  Cup water

Method:-
  1. Chop all the nuts/dry fruit into medium bits except raisins (measure each to get 1/4 cup)                  
  2. Heat the ghee in a small pan or kadhai and add the edible gum( the small light golden pebbles in the first picture above) and fry.
  3. They will start puffing up, once all the gum has puffed up, remove them on paper towel leaving the ghee in the pan .
  4. Allow it to cool.
  5. Crush them to a coarse powder using pestle and mortar or pulse in a mixer. Take care not to make a smooth powder, keep aside.
  6. In the same pan fry all the chopped nuts and raisins one by one to a light golden and remove to a wide plate..
  7. Now to the same pan add desiccated coconut/copra and fry till light golden and remove on the same plate as of nuts.
  8. Fry poppy seeds in the same pan till they start to splutter and remove them also into the same plate.
  9. Add crushed dink/edible gum to this plate and mix well.
  10. In a deep and wide kadhai melt jaggery with water, add the cardomom and nutmeg powders and stir continuously till you get the desired consistency syrup. To check drop a small portion of the syrup in a bowl /plate of water. .if it does not dissolve and form a ball like then its ready.. refer the pic below
  11. At this stage switch off the gas and add the fried nuts and dink mixture to the kadhai and mix well and let it cool.
  12. When cool or warm enough to handle form small balls and shape them into laddoos

Notes:-
  1. The texture depends on the gum and the consistency of syrup.
  2. I have not tried this without using the gum..so don’t know if this can be made without it.
  3. You can use the nuts you prefer.
  4. You can strain the jaggery syrup to remove impurities, as mine is without any I skipped that step.
  5. If using less ghee you may need to add some ghee in between while frying the nuts.
