Kobba Udkache Bhakri (Sugarcane juice Bhakri )

                                      Kobba Udkache Bhakri (Sugarcane juice Bhakri ) is an age old dish and it’s recipe  is  almost forgotten, many of you might not even heard about it.Some people may not even like it as the roti will be sweet because of the sugarcane juice, but you can always try any recipes atleast once. This roti goes very well with fresh homemade ghee or very spicy garlic wet chutney.
Recipe for making  12 rotis
Ingredients:-
  1. 2 &1/2 cups of sugarcane juice
  2. 2 cups of rice flour
  3. 2 pinches of salt
  4. 1 tbsp maida  
  5. Rice flour for rolling the rotis 

Method:

Keep half cup of the juice, mixing the maida well in it, keep aside.
Take a wide deep thick bottomed vessel boil the remaining 2 cups of sugarcane juice  and then add salt.
When it starts to boil slowly pour the maida batter into it  stirring continuously.
Now add 2 cups of rice flour little at a time, mix well for 2 to 3 minutes and switch off the gas.
Knead the dough well using both hands smeared with ghee or oil.
Divide the dough into 12 equal parts and make pedas. Roll them dusting with rice flour.
Heat a tawa and place the roti  to cook  
Roast on both sides .You can smear it with ghee or leave it  plain.
Adding maida is optional. My mother  used to do with only rice flour. But I added it  as I found that it makes the rolling very easy even for beginners, Since it’s only one tbsp, it doesn’t affect the taste much and the rolling is easier .

Recipe for the chutney:-

  1. 1 cup of freshly grated coconut
  2. 8 roasted red chillies
  3. Small gooseberry size tamarind
  4. 10 to 12 flakes of slightly roasted garlic
  5. Salt to taste.

Method :-
Grind all the ingredients together using very little water  .
