Golibajo is a very popular snack prepared in the Udupi Mangalore belt .Every small eatery and famous restaurants have this item on their menu. It is known by names like Mangalore bajji or Mysore bonda too in other parts of Karnataka and equally popular in Konkani households as everyone love this snack. Its usually prepared as an evening snack and had piping hot, straight out of Kadai.
Though it is made up of Maida and not very healthy …it is ok to prepare it at home occasionally and enjoy in small quantities. Sharing my version with all of you and hope you too will try and enjoy this popular snack .
Ingredients :
- 2 cups Maida
- 1/4th cup Besan
- 1/4th cup slightly sour curd
- 1/2 tsp soda
- 1 tsp sugar
- 2-3 tbsp of minced green chillies and curry leaves.
- Salt to taste
- Oil for deep frying as required
Method :
- Sieve Maida and Besan and transfer it into a wide bowl.
- Add sugar ,salt ,minced chillies and curry leaves and give a mix.
- Now add the curd and whisk well taking care that there are no lumps.
- Add the soda and give a gentle mix and let it rest for a good 30 minutes.
- Heat oil in a pan or Kadhai ..once hot change the flame to medium high.
- Drop small ball sized portions from the batter into the oil and deep fry till they attain a nice golden colour.
The delicious yummy golibajo is ready to be served with chutney .Enjoy this snack with a hot cup of coffee .
NOTES :
- I have been following the same measurements and it has never failed me ..so do follow it exactly without change.
- You can halve the recipe too to make it in very less quantity.
- Do not omit soda as it is very much required for attaining the texture.
- If the curd is too thick the batter might need some water ..so adjust the consistency accordingly .
- The consistency should be thick and not too thin…or else you won’t get a nice round shape.
