Mixed Vegetable Sukke

                        Sukke is a side dish had with rice.It is prepared with various mixed veggies cooked in coconut masala.It is prepared on auspicious days as it does not have onion or garlic.
Ingredients:

  1. Cucumber:  1/2 of 1 cucumber                               
  2. Long Beans(alsandey): 8-10 nos
  3. Potato: 1-2
  4. Suran: 1/2 piece

For the Masala

  1. Coconut: -1/2 grated
  2. Fried red chillies: -6-8
  3. Tamarind: marble size
  4. Urad dal: Fried in a tsp of oil.
  5. Jaggery:- small piece
Seasoning:
  1. Mustard: -1tsp
  2. Curry leaves: 4-5
  3. Oil: 1 tsp

Method:
                                         Chop the above mentioned veggies into big chunks.

  In a kadai prepare seasoning with mustard and curry leaves in oil and when the mustard splutters add these veggies washed previously .Add water enough to cook the veggies,.when half done add salt Cover and cook.

     While this gets cooked,grind the ingredients for the masala to a coarse paste excluding jaggery.

  Now check whether the veggies are cooked and soft.Add jaggery and the ground masala and bring to boil.Can add little water used to wash the mixer.Check for salt.This curry is a semi gravy,so don’t add more water.

                

        

                        Now your curry is ready to be served with rice and dalithoy.
Note: Can add few more veggies like ridge gourd (gosale),wild bitter gourd (kantola/phagil) along with the above mentioned veggies.
Similar sukke is prepared with capsicum alone with the same masala. ,chopping capsicum into big squares.
