Kananga(sweet potato) and Seemebadane(chowchow) phodis(Tava Fries)

Phodis are all time favourite for Konkanis. We usually like deep fried ones but everyone knows eating oily and deep fried food daily is not healthy. Tava frying the phodis is a best way to indulge without guilt. Its easy and quick and can be made anytime and with most of the vegetables .I have even tried mooli tava fries and believe me it tastes great and kids will not even know they are eating radish. Here i have tried to explain step by step to give you an idea choosing two vegetables -Sweet potato and Chowchow(choyota squash) also called as Seemebadane in kannada.
Ingredients:
  1. 1 sweet potato
  2. 1 seemebadane / chowchow (choyota squash)
  3. 1/4 cup bombay rava (fine rava)
  4. Red chilli powder as required depending upon your spice level.
  5. Salt to taste
  6. Oil for frying
  7. Pinch hing
Method:
Peel the skin of the sweet potato and the chow chow ,slice them into medium thick  roundels and dip them in water.
  • Take the bombay rava on a plate, add the red chilli powder, salt ,hing and mix well so that it is  all properly mixed.
  • At this stage check for taste and adjust the salt and chilli powder as once the phodis are done you cannot add them .
  • Remove the slices from water ,sprinkle some salt and toss them.
  • Roll the sweet potato and Chowchow slices one by one in the rava mix and keep aside.

Heat the tava and drizzle some oil on it.

Place the rolled slices onto the tava one by one and drizzle some oil .Keeping the flame on medium, close the lid for 2-3 minutes .

just before closing the lid
  • Remove the lid and flip them to other side ,drizzle some oil and cook for further 2-3 minutes without the lid.
  • Check if its done by pricking with a fork or knife.
  • Cook for 1-2 minutes more if required and switch off.

Tava fries are ready to be had with lunch or dinner as side dish 🙂

Notes:-
  1. You can use vegetables like potato, kantola(phagil) , raw banana, bread fruit, nendrabale (kerala banana),cauliflower etc to prepare the phodis with the same method.
  2. Do not keep it longer on the tava than mentioned as it  will make the phodis hard .
  3. Some sprinkle water also to ensure even cooking but I prefer to cook it in steam only except for the radish ones.
  4. Below are fries made from Kerala banana(nendran) and raw banana.
