Phagil frys (version 2 Instant method)

           Phagil/Kantola/teasel gourd is the vegetable that belongs to the bitter gourd family.It is a seasonal veggies which is available during the rainy season.Though there are several recipes made with this vegetable,almost many of the konkanis prefer Phagil fry which is very tasty and favourite of all.I have shared phagil talasani and koot in this blog earlier.
My friend cum blogger Sandhya Puranik has shared her version of phagil fry with ground masala. My version is instant prepared with rice powder.

Ingredients

  • Phagil – 5 nos
  • Chilli powder as per taste
  • Turmeric – a pinch
  • Hing – 1 tsp
  • Salt as per taste
  • Rice powder 1-2 tbsp

Method:-

Cut Phagil lengthwise and keep aside.Mix together chilli powder,turmeric,hing and salt with little water to a paste form.
Now apply the paste on both sides of the piece
Similarly continue with all the pieces.
Now dust every piece in rice powder on both sides
In a fry pan add enough oil.when medium hot place each rice flour coated pieces one by one in the oil and fry on both sides till light brown.
Hot Phagila phodi is ready to serve.

Notes

  • Similar Phodis can be prepared with vegetables like potato,sweet potato,raw banana,Parwal / goint, unmatured small banana , Bitter gourd , Bread fruit,snake gourd,ridge gourd,pumpkin and radish too.
  • Rice powder can be replaced with white rava/sooji.
  • Instead of shallow or deep fry they can be tava fried too.
  • In case of suran and tender jack.they need to be cooked in water till soft and after draining the excess water or steamed , then follow the same procedure.
