Koro

                    Koro is a very popular snack with the GSBs ,,,a crisp savoury snack ..this is made for all occasions – festive , functions , marriages & all ,,Since it quite easy to do , this is made in large amounts . When stored in air- tight containers . it keeps well for long time too ! This is especially made for Deepavali as its quite easy to make . As this festival means lighting lamps , giving gifts , and sharing sweets and savouries ! So this is a good choice when you can make lots & quickly too !
So lets see how to make this ! For this you  will basically need the Chakli maker with a perforated hole plate .

Ingredients :-
  • Besan( chickpea flour )/ Chonya Pitti – 250gms
  • Rice flour – 1 tbsp
  • Chilli powder – 1tsp or more as per your spice level
  • Turmeric powder – 1/ 4 tsp
  • Hing – 1/2 tsp
  • Butter or oil – 2 tbsps
  • Pepper powder – 1.5 tsps
  • Ajwain / Owain -1.5 tsps
  • Soda – a pinch ( optional )
  • Salt to taste
  • Oil for deep frying !

Method:-

Mix all the dry ingredients in a wide bowl uniformly.
Heat the butter or oil  and pour over the mixed flour . Mix well with a spoon . When cool mix well with your hands so that the butter /oil has mixed well  . Then add just sufficient water   to make a soft sticky dough ( like a  very sticky chapati dough)
Now get the chakuli maker ready with the multi holed plate . Grease the insides  & over the bottom of the pressing handle .Spoon in the dough into the press . Test to see if you get a steady stream of dough when you press .
You should be getting a steady stream of dough without breaking .If you are having trouble pressing ..sprinkle a little water into the dough , mix well & try again . if your dough is too squishy , add a little more besan flour , mix well & try again!
Now that you have got the right consistency ,heat the oil in a deep pan .
When the oil is hot press the dough directly into the oil forming a large circle . See that the dough doesn’t overlap much . As far as possible make a large circle ,then going to a smaller one as shown in the pic below !
Press the dough when the oil is hot . it will immediately rise to the top with a lot of bubbles . At once reduce flame ..let cook for some seconds more , Now slowly flip the koro and let fry  in medium flame until all the bubbles have reduced considerably , Now increase flame and flip so that you get a good colour . Remove to a sieve  and let the oil drain .
Please do take care about the flame as otherwise you will have uncooked insides & the Koro will not remain crisp .
When you have done with all the dough  ..transfer the Koro into  air tight containers after they have cooled  and you have broken them into pieces as shown in the pic below .
